Method

1. Build the Base

Fry blended peppers in palm oil 15 minutes until oil rises. Add cooked meat, stockfish, crayfish and Jumbo. Simmer 10 minutes.

2. Egusi Layer

Stir in 200g egusi mixed with water. Cook 10 minutes before okra goes in — this gives the soup body and richness that elevates the whole dish.

3. Okra Last — 5 Minutes Only

Add okra and stir. Cook exactly 5 minutes. No more. Overcooking destroys the draw texture and turns it slimy rather than silky. Serve immediately with eba or pounded yam.
