Nigerian Pepper Soup: The Recipe That Fixes Everything

Nigerian Pepper Soup: The Recipe That Fixes Everything

Nigerians prescribe pepper soup the way doctors prescribe medicine. Fever? Pepper soup. Cold? Pepper soup. New baby? Pepper soup for the mother. And made properly, it is one of the most elegantly complex broths in world cuisine — clear, fiery, herbal, and deeply warming in a way that feels ancient.

Ingredients (Serves 6)

Method

1. No Frying. This Is a Broth.

Meat into a pot with water, onion, salt and half the spice. Cook 45–60 minutes until completely tender.

2. The Second Seasoning

Add blended scotch bonnets, remaining spice, Jumbo, Knorr and more water for broth consistency. Simmer uncovered 15 minutes. It should be dark amber, searingly hot, and smell like nothing else on earth.

3. Utazi Finish

Tear fresh utazi leaves in by hand just before serving. Their mild bitterness rounds out the heat beautifully.

For healing chicken pepper soup: use a whole Henko Whole Hen. The collagen it releases makes a broth that genuinely feels medicinal.
