Moi Moi That Actually Tastes Like Home: The Complete Recipe
Moi moi is the dish that ends arguments. Every region in Nigeria claims it, everyone loves it. A properly made moi moi is silky-smooth, subtly spiced and astonishingly satisfying. The trick is in the batter and the boldness of seasoning.
Ingredients (Serves 8–10)
- MP Bean Flour — the fastest, most consistent route to perfect moi moi batter
- 1 red bell pepper, 2 scotch bonnets, 1 onion
- 3 tbsp vegetable oil
- 3 Jumbo cubes, 1 tbsp Knorr Chicken Powder
- Fillings: hard-boiled eggs, cooked prawns, Titus sardines
Method
1. The Batter
Mix bean flour with water to a thick smooth batter — slightly looser than peanut butter. Add finely chopped peppers and crumbled Jumbo cubes. Beat vigorously 5 minutes — the beating incorporates air and gives akara its lightness. Season aggressively: the boldness in the raw batter becomes perfect after steaming.
2. Fill and Steam
Pour into foil cups or ramekins. Add your chosen fillings. Steam over boiling water 45–55 minutes. Do not lift the lid before 40 minutes. Skewer should come out clean.
Serve warm alongside Nigerian fried rice and jollof.
