Amala and Ewedu: The Yoruba Power Couple That Defines Lagos Dining
In Lagos, the amala and ewedu question is not 'if' but 'where.' Every neighbourhood has its spot. Arguments about which buka makes the best combination can end friendships and forge them in equal measure. It is the city's version of a Michelin argument — earnest, deeply personal and always delicious.
The Three-Component Meal (Abula)
Amala (dark swallow) + ewedu (green jute leaf soup) + gbegiri (smooth bean soup) = abula. They arrive together, poured in layers. This is non-negotiable.
Making Amala
- MP Elubo Yam Flour 4kg — the dark yam flour that gives amala its colour and taste
600ml boiling water per 200g flour. Add gradually, stirring constantly. Steam 3 minutes on low then fold vigorously until smooth and elastic. Amala should be dark and slightly smoky — that darkness is authentic and desirable.
Making Ewedu
- Fresh or frozen jute leaves, locust beans, 1 Jumbo cube, salt
Boil ewedu in water 10 minutes. Blend briefly — slimy and slightly textured, not fully smooth. Return to heat with locust beans and Jumbo. Simmer 5 minutes. It should be gloriously slimy.
Serve with a rich Nigerian tomato stew. The dark amala, slimy ewedu and bold stew together represent Yoruba cooking at its finest.
