Gizdodo: The Nigerian Party Snack That Goes Viral Every Single Time

Gizdodo is proof that the most brilliant food ideas are also the simplest: gizzard — the most intensely flavoured part of a chicken — paired with fried ripe plantain. Sauced in a spiced tomato base. Served warm and gone in eleven minutes flat, every time, without exception.

Ingredients (Serves 8 as starter)

  • 600g chicken gizzard or turkey gizzard
  • 4 ripe plantains — deeply yellow, heavily spotted black
  • Blended red bell pepper, scotch bonnets, onion
  • 2 Jumbo cubes, curry powder, thyme, oil

Method

1. Cook and Char the Gizzard

Parboil gizzard with onion, Jumbo and thyme for 30 minutes. Drain. Fry in hot oil until edges char slightly — 5 minutes on high. The slight char is not a mistake. It is the best part.

2. Fry Plantain Separately

Slice diagonally 1.5cm thick. Fry in hot oil until deeply golden — almost caramelised. The plantain should hold its shape when pressed.

3. The Sauce

Fry blended peppers and onion in remaining oil for 10 minutes. Season with Jumbo and curry. Add gizzard back in and coat completely. Fold in fried plantain gently. Serve hot immediately.
