Uziza (Piper guineense) is one of the most aromatic and distinctive leaves in West African cooking. With a warm, peppery bite and a deep, earthy fragrance, it's the leaf that gives pepper soup its unmistakable character — and it's equally at home in Ofe Akwu, Edikang Ikong, and Oha soup.

How to Use
- Pepper soup — the essential Uziza dish; add shredded leaves in the final minutes
- Ofe Akwu (Banga soup) — pairs beautifully with palm fruit base
- Edikang Ikong — combined with waterleaf for a rich, nutritious soup
- Oha soup — used alongside Oha leaves for depth
- Egusi soup — adds a peppery lift to the melon base
Preparation
- Rinse thoroughly under cold running water before use
- Shred or slice thinly — Uziza is potent, so a little goes a long way
- Add in the last 2–3 minutes of cooking to preserve aroma and colour
- Pairs perfectly with crayfish, stockfish, palm oil, and scotch bonnet
Storage
- Store in the fridge crisper drawer and use within 3–5 days
- Blanch and freeze in sealed bags for longer keeping
