Description
Puna Yam Box is fresh whole white yam (Puna yam), the same tuber used to make hand-pounded iyan, yam porridge (asaro), yam chips and ikokore. Peel, boil and pound, or boil and roast for a hearty, traditional West African meal.
How to prepare
- Peel away the rough outer skin and cut into chunks.
- Rinse thoroughly, then boil in salted water for 25-40 minutes until soft enough to pierce easily with a knife.
- For pounded yam: pound the boiled chunks until smooth and stretchy, or blend in batches with a little water.
- For asaro (yam porridge): simmer the chunks with palm oil, pepper, onion and crayfish until soft and slightly mashed.
Storage
- Store whole, unpeeled yam in a cool, dry, dark place — not the fridge — for up to 2-3 weeks.
- Once peeled or cut, keep in water in the fridge and use within 1-2 days.
