How to prepare

• Grind or blend the whole seeds into a coarse or fine powder before cooking, depending on your preferred soup texture.
• Fry the ground egusi in hot palm oil with onions, pepper and stock to form a thick paste, then simmer with leafy greens, fish, meat or crayfish.
• Stir occasionally as it cooks to stop it catching on the bottom of the pot.

Storage

• Store in a cool, dry cupboard, tightly sealed after opening.
• Keep out of direct sunlight and moisture.
