Mp Elubo Yam Flour 4kg
Description
MP Elubo Yam Flour is the authentic dark yam flour used to prepare Amala — the smooth, dark-brown Yoruba swallow that is a cornerstone of south-western Nigerian cuisine. Elubo is made from the dried, ground outer peel and skin of yam tubers (Dioscorea spp.), which gives it its characteristic dark brown colour and distinctively earthy flavour. This is what separates Amala from white Pounded Yam (Iyan) — the peel, not the flesh. The result is a smooth, elastic, dark swallow with a satisfying depth of flavour that no other swallow can replicate. This 4kg pack is ideal for large households and regular cooking.

How to prepare Amala
- Bring 2 cups of water to a rolling boil per 1 cup of elubo flour.
- Gradually pour in the flour whilst stirring vigorously with a wooden turner to prevent lumps.
- Reduce heat, cover the pot, and steam for 2 minutes.
- Uncover and stir again until smooth, dark brown, and elastic in consistency.
- Serve hot, shaped into balls, alongside ewedu, gbegiri, okra, or your preferred Nigerian soup.
Best soups to serve with Amala
- Ewedu with gbegiri (Abula) — the most traditional Yoruba combination: jute leaf soup and bean soup served together with stewed assorted meat
- Okra soup (Ila) — a popular everyday pairing
- Ogbono soup — the draw texture of ogbono complements Amala beautifully
- Efo Riro — Yoruba spinach stew with assorted proteins

Frequently asked
Is Elubo the same as Pounded Yam flour?
No — they are completely different products. Elubo is made from dried yam peel/skin and produces dark brown Amala. Pounded Yam flour (Poundo Iyan) is made from the white flesh of whole yam tubers and produces white, stretchy Iyan. Amala and Iyan are different swallows traditionally served with different soups.
What gives Amala its dark brown colour?
The characteristic dark colour comes from the yam peel and skin used to make Elubo. The outer layer of the yam tuber, when dried and ground, retains the natural dark pigmentation — this is what distinguishes Amala from the white Iyan made from yam flesh flour.
Is Elubo yam flour gluten-free?
Yes — yam flour is naturally gluten-free. Check the pack for cross-contamination information if you have a severe allergy.
