• Mix the flour with cold water to a smooth paste. Bring remaining water to a boil in a heavy pot.
• Add the paste to the boiling water and stir continuously and vigorously with a wooden turner.
• Cook on medium-low heat, stirring constantly to prevent lumps, until the mixture is thick, smooth, and pulls away from the sides of the pot.
