Green Plantain x3
Description
Green Plantain x3 is unripe plantain — firm, starchy and not yet sweet, the variety used for savoury cooking rather than the soft, caramelised dishes made from ripe yellow plantain. Boil it for a starchy side, fry it into crisp chips, pound it into plantain fufu, or slice it for kelewele and boli once it begins to ripen.
How to prepare
- Peel (the skin is tougher than ripe plantain and easier to remove after a shallow cut along the length) and rinse before use.
- Boil whole or sliced, or cut into rounds and fry for chips.
