Graceco Yellow Ogi, also known as akamu, is dried fermented yellow maize ground into a fine powder, the same pap eaten for breakfast across Nigeria and West Africa, just with the soaking, fermenting and sieving already done for you. A pantry staple for Pan-African kitchens across the UK diaspora.
How to prepare
- Mix a few spoonfuls with cold water to a smooth paste, then stir in boiling water until it thickens into a smooth pap.
- Serve with milk and sugar, or alongside akara or moin moin, just as you would traditional ogi.
